These Coconut Oil Chocolate Chip Cookies are a dairy-free version of everyone’s favourite classic cookie recipe. We’ve also used coconut sugar to replace most of the conventional sugar, and the result is a delicious, sweet cookie with a deep caramel-like flavour.
Ingredients
● 90g Green Origins Coconut oil
● 80g Green Origins Coconut sugar
● 90g Brown sugar
● 2 eggs
● 2 tsp Vanilla Essence
● 315g Plain flour
● 1 tsp Bicarbonate of Soda
● Pinch of Salt
● A generous sprinkle of chocolate chips
Method
1. Pre heat the oven to 180c and line 2 large baking trays with parchment paper.
2. Sieve the flour into a mixing bowl, add the sugar, eggs and salt and whisk until combined.
3. Melt the coconut oil in a microwave and add to the mixing bowl, whisking until a dough forms.
4. Sprinkle in the chocolate chips and fold into dough.
5. Create little balls of dough roughly 3 inches wide and squash with the palm of your hand on the trays to create a cookie shape.
6. Cook for 20 mins or until golden brown.
Ready in 25 minutes
Makes 12 cookies.
